Buffalo pickle pav

Street food logic applied to a jar from Kerala. Buffalo Pickle is rich enough that it needs nothing but bread, raw onion and lime to become a proper meal.
What you need
- 4 pav
- 2 tablespoons Buffalo Pickle
- 1 small onion, sliced into thin rings
- Butter
- Half a lime
How
- Split the pav and toast the cut sides in butter until golden.
- Pack each one with the pickle, keeping the meat chunky rather than spreading it thin.
- Add the raw onion rings — they matter, they cut the richness.
- Squeeze lime over and close. Eat standing up, over a plate.
One more thing
Works the same way in a wrap, but the onion has to stay raw.
