Buffalo pickle pav

Street food logic applied to a jar from Kerala. Buffalo Pickle is rich enough that it needs nothing but bread, raw onion and lime to become a proper meal.

What you need

  • 4 pav
  • 2 tablespoons Buffalo Pickle
  • 1 small onion, sliced into thin rings
  • Butter
  • Half a lime

How

  1. Split the pav and toast the cut sides in butter until golden.
  2. Pack each one with the pickle, keeping the meat chunky rather than spreading it thin.
  3. Add the raw onion rings — they matter, they cut the richness.
  4. Squeeze lime over and close. Eat standing up, over a plate.

One more thing

Works the same way in a wrap, but the onion has to stay raw.
